Fall Recipe: Spiced Apple Muffins

Abundant crispy apples herald the beginning of the fall, and what better way to use them than in delicious homemade muffins? These yummy bites will make your home smell wonderful as you bake them, and they freeze well if your family wants to enjoy them later.

Preheat the oven to 400 degrees. Combine 2 cups of flour, 1 cup of quick oats, 2/3 cup of sugar, a tablespoon of baking powder, a teaspoon of salt, a teaspoon of cinnamon, and 1/4 teaspoon of ground nutmeg. In a separate bowl, whisk 2 eggs with 2/3 cup apple juice and 1/4 cup oil. Peel and grate 2 apples to get 1-1/2 cups of grated apple.

Grease a muffin tin or use paper liners. Mix the wet ingredients into the dry ingredients with a few swift strokes, then fold in the grated apple. Spoon the batter into the muffin cups so they are 2/3 full, and bake for 17 to 20 minutes.
